While stoneware stones are much lower cost to produce, they CAN NOT perform like Bravo stones. What is the main difference? Only refractory stones have the porosity to absorb substantial moisture and bake really great crisp crusts. Keep your stone in the oven to diffuse and radiate an even oven heat, when youre baking cakes, casseroles and cookies. They are Easy to use -- preheat oven to 450 degrees, build pizza on top of peel, dusted with cornmeal first. Top your pizza and lide onto hot stone. Bake for 20-25 minutes. Use the peel to remove pizza from the oven. Dont wash the stone, simply scrape, brush and wipe clean. Let your stone become dark and seasoned, which enhances its performance
