Making Stuffed Peaches

Making Stuffed Peaches

Ingredients:

  • 2 ½  Tbsp. unflavored gelatin
  • ½ cup water
  • 20-oz. can peach halves, drained, reserving juice
  • 2 cups reserved peach juice
  • ¾ cup sugar
  • 1/3 cup lemon juice
  • 8-oz. pkg. cream cheese, softened
  • 1 Tbsp. mayonnaise
  • 1 cup finely chopped walnuts

Preparation:
Place ½ cup water in small bowl and sprinkle gelatin over to soften. Drain peaches, measure liquid, and add water to juice, if necessary, to make 2 cups. Pour peach juice mixture and sugar into a saucepan and bring to a boil. Add softened gelatin, remove from heat, and stir until dissolved. Add lemon juice. Measure this liquid mixture in a large Pyrex glass measuring cup, and add enough cold water to make four cups total. Chill until slightly thickened.

Meanwhile, mix cream cheese with mayonnaise and shape into 8-1" balls. Roll in chopped walnuts to coat. Place the halved peaches into individual molds or custard cups and place cream cheese ball in center of each peach. Pour chilled gelatin mixture over all to fill cups. Cover and chill until firm, 2-3 hours
