Pizza Pans & Stones Guide

Home-made pizzas can be marvelous when baking in a pizza pan or a pizza stone. Pizza pans and stones are found in many shapes and sizes, with each having a different intended use. These are also made of different materials…some better than others.
There are basically 3 types of pizza pans: Thin Crust Pans, Deep Dish Pans, and Sicilian Pans. Usually, pizza lovers prefer pizza stones to pizza pans, as the terra cotta tiles of the stone keep the bottom crust crisp rather than the soggy crust one gets from a pizza pan. If your preference is for a softer crust, then use a pan. A perforated pan will allow more moisture to escape resulting in a more crisp crust.
With the pizza stone, one needs a paddle to get the pizza to the hot stone and back. Long handled paddles are much easier to use then the more common short handled paddles.
