Ingredients:
- 1 pound chicken tenders
- ½ tsp. kosher salt
- ½ cup shredded Parmesan cheese
- ¼ tsp. paprika
- 1 Tbsp. olive oil
- 2 Tbsp. Dijon mustard
- ½ cup regular mustard
- ¼ cup apricot jelly
- ¼ cup mayonnaise
Preparation:
Season chicken with kosher salt. Place Parmesan cheese in a shallow dish. Toss with paprika.
Heat olive oil in a skillet over medium heat. Brush Dijon mustard all over both sides of chicken tenders with a pastry brush. Dip each chicken tender in Parmesan cheese mixture, pressing lightly to coat on both sides.
Place chicken tenders in skillet in a single layer, being careful not to crowd them. Cook 5-7 minutes, turning halfway through, until chicken is cooked through. Combine remaining ingredients in a small serving bowl. Serve chicken tenders with apricot mustard dipping sauce. |
