If you go through the recipe book or search the websites for new recipe you will never find a recipe for one. When you cook for one you always have left over food or more wastage for you could not eat the whole thing. But even small quantity cooking can be made interesting and without going anything for waste. During shopping buy foods that are individually frozen so that you take out the amount of food you require and keep the rest. Also there are prepacked single serving foods like reduced sodium canned soup, low-fat, ready to eat, making use of hand low-fat frozen meals will also do.
Store the food in the freezer while it is fresh for it keeps food fresh for many days. You can freeze vegetables, grains, breads, fruits, meats, seeds and nuts. If you want to save your time then cook meal in advance is good. But freeze in a single size portions so that you can take out the individual size savings. This will avoid wastage. When you freeze the food write the date and contents of the packages so that you avoid the chance of eating food that has crossed its due date of consuming.
Use those methods of cooking that are quick and simple. Like prepare a one-dish meal –a dish that serves as a wholesome meal. You can include foods from different food groups like whole grains, meats, vegetables and legumes. Prepare a dish of chicken, rice and vegetable casserole, vegetable chili with diced vegetables, and many such healthy combinations can be made and enjoyed eating. In this way you will cook for one and still it will have everything that can be called as balanced diet.
